Granola Recipes


Apple Cinnamon Granola Recipe

Ingredients:
4 cups old-fashioned oats
1/4 cup packed brown sugar
1/4 cup vegetable oil
1/4 cup honey
1/4 cup apple juice
1 teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1 cup raisins
1/2 cup chopped pecans
1/2 cup slivered almonds

Directions:
In a large bowl, combine oats and nuts; set aside. In a saucepan, combine brown sugar, oil, honey, apple juice and cinnamon; bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat. Spread in a large shallow baking pan. Bake at 350 degrees F for 15 to 20 minutes (until golden brown but not burnt), checking and stirring often. Cool. Add raisins. Store in an airtight container.

In class, we made these granolas into parfaits! One idea for a delicious apple-cinnamon parfait is to saute sliced apples in oil and cinnamon until soft. Layer these, granola, and vanilla yogurt for a nutritious and delicious breakfast or snack!


Tropical Granola Recipe

Ingredients:
4 cups old-fashioned oats
1 cup shredded coconut
1/4 cup packed brown sugar
1/4 cup vegetable oil
1/4 cup honey
1 teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1/2 cup slivered almonds
1 cup sliced dried apricots and/or diced dried papaya

Directions:
In a large bowl, combine oats, coconut, and slivered almonds; set aside. In a saucepan, combine brown sugar, oil, honey, and cinnamon; bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat. Spread in a large shallow baking pan. Bake at 350 degrees F for 15 to 20 minutes (until golden brown but not burnt), checking and stirring often. Cool. Add dried fruit. Store in an airtight container.

1/2 cup chopped pecans
1/2 cup dried blueberries
1/2 cup dried cranberries

Directions:
In a large bowl, combine oats, pecans, and slivered almonds; set aside. In a saucepan, combine brown sugar, oil, honey, and cinnamon; bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture; stir to coat. Spread in a large shallow baking pan. Bake at 350 degrees F for 15 to 20 minutes (until golden brown but not burnt), checking and stirring often. Cool. Add dried fruit. Store in an airtight container.
